Ingredients

Dough
 280 g flour
 50 g of powdered sugar
 1 teaspoon of bourbon vanilla sugar
 ½ teaspoon of baking powder
 ½ teaspoon of sodium bicarbonate
 120 g cold butter cubes
 1 egg
Filling
 6 apples
 100 g of sugar
 10 g grams of food amidine
 50 ml cold milk
 1 teaspoon of spice mix (cinnamon, lemon, ginger, nutmeg)
 30 ml maple syrup
 1 tablespoon of melted butter
 1 tablespoon of bourbon vanilla sugar

Preparation

For the dough, mix flour with sugar, baking powder and bicarbonate.

Then incorporate the butter followed by the egg.

Put the obtained dough in the refrigerator for 30 minutes.

Meanwhile, prepare the filling. Peel 5 apples and clear them of seeds, then cut into cubes.

Put the apples in a saucepan with sugar and 200 ml of water. Put the saucepan over the fire and let the apples boil until they become soft.

After the apples become soft, take them off the fire and mash them. Dissolve the amidine in cold milk and mix it with the apple mash. Put the composition back on the fire, and let it boil until it thickens a little.

Take the mash off the fire and mix it with one teaspoon of spice mix and 30 ml of maple syrup.

Take the dough out of the refrigerator, stretch it and put it into a baking mold for tarts (or individual shapes). Cook for 8 minutes at 200 ° C.

In the meantime, clear the remaining apple of seeds and cut it into thin slices. Mix the slices with melted butter and sprinkle with bourbon vanilla sugar.

After 8 minutes, remove the crust from the oven, pour over the apple mash, then decorate with apple slices. Bake the tart for another 6 to 8 minutes.
